What is Buko Pandan?
Buko means young coconut. Pandan is a leaf that gives a floral, nutty flavor. The two ingredients together create a delicious combo. Buko pandan is traditionally a chilled Filipino dessert that consists of pandan jellies and shredded coconut pieces in a mix of coconut milk and sweetened condensed milk. You can also add in palm fruit, tapioca pearls, and coconut jellies as well. It like a refreshing, cold, sweet, soup-like dessert.
How to make Buko Pandan Muffins
To make this vibrant muffins, you will need some buko pandan extract. This is what is going to give us the main flavor and also make it green. You can also make the extract from home if you have fresh pandan leaves. However, to make this easier, we are using buko pandan or just pandan extract. You will also need coconut milk and shredded coconut for both the batter and the strudel.
I don’t know about you, but I like my muffins extra moist. My secret to a moist muffin is adding in greek yogurt to the batter. Don’t knock it till you try it! You could also add in more oil, but I found that greek yogurt works the best!

Buko Pandan Muffins with a Coconut Strudel
Ingredients
For the Buko Pandan Muffin Batter
- ½ cup milk I used 2%
- ½ cup coconut milk
- ½ cup greek yogurt
- 1½ cups granulated sugar
- ⅔ cup oil
- 2 eggs
- 2 tsp buko pandan extract
- 4 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
For the Coconut strudel
- ¼ cup flour
- ¼ cup granulated sugar
- ¼ cup shredded coconut
- 2 tbsp melted butter
Instructions
Coconut Strudel
- Mix together all the ingredients until you have a crumbly texture. Side aside while we make the muffin batter.
Muffin Batter
- Preheat oven to 350℉ and line your muffin pans with muffin liners.
- In a mixing bowl, whisk together the milk, coconut milk, and greek yogurt.
- Mix in the eggs, oil, sugar, salt, and buko pandan extract.
- In another mixing bowl, mix together the salt, baking powder, and flour.
- Gradually mix in the dry ingredients into the bowl of the wet ingredients.
- Mix until it form a batter but be careful to not over mix the batter. that can cause it to dry out the batter.
- Divide the batter evenly into your muffin pan.
- Take your coconut strudel and sprinkle it on top of the muffins evenly.
- Place muffins into the oven for about 30 minutes or until a toothpick is inserted in the middle of the muffins and comes out clean.
- Let the muffins cool for about 10 minutes in the muffin pan. Then remove let completely cool.
- Serve with a cup of coffee or tea and enjoy!
