Pumpkin Banana Bread with a Maple Glaze
Ingredients
Pumpkin Banana Bread
- 1½ cup all purpose flour
- ½ cup pumpkin puree
- 2 extra ripe banana
- 1 egg
- ⅓ cup vegetable oil
- ¼ cup brown sugar
- ½ cup granulated sugar
- ½ tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp pumpkin pie spice
- ¾ tsp salt
- ½ cup chocolate chips, chopped walnuts, or peacons Optional
Maple Glaze
- ½ cup powdered sugar
- 2 tbsp maple syrup
- 1 tbsp milk
- 1 pinch of salt
Instructions
Pumpkin Banana Bread
- Preheat oven to 350℉
- In a large mixing bowl, mash up two ripe bananas.
- Add in the pumpkin puree, egg, and oil.
- Once all mixed together, add in both sugars, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt. mix until combined.
- Add in the flour to the batter and fold it in until combined.
- Fold in chocolate chips or nuts.
- Place batter into a lined loaf baking pan and bake in the oven for 30 mins or until done.
- Once loaf is fully baked, let it completely cool.
- While the bread is cooling, combine the powdered sugar, maple syrup, milk, and salt until it is an icing consistency. Set aside until loaf is completely cooled.
- After loaf is cooled, spread the maple glaze evenly on top of the loaf, and it is ready to be served. Enjoy!
Notes
- The riper the banana’s the sweeter the bread. When a banana is black, it is ready to go!
- Do not over bake the loaf. You want it to be nice and moist and over baking could affect that.
