Pumpkin Banana Bread with a Maple Glaze

Delicious Pumpkin Banana Bread topped with a maple glaze is one of my favorite fall baking recipes and it filled with cinnamon and fall spices!

Ingredients
  

Pumpkin Banana Bread
  • cup all purpose flour
  • ½ cup pumpkin puree
  • 2 extra ripe banana
  • 1 egg
  • cup vegetable oil
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp pumpkin pie spice
  • ¾ tsp salt
  • ½ cup chocolate chips, chopped walnuts, or peacons Optional
Maple Glaze
  • ½ cup powdered sugar
  • 2 tbsp maple syrup
  • 1 tbsp milk
  • 1 pinch of salt

Method
 

Pumpkin Banana Bread
  1. Preheat oven to 350℉
  2. In a large mixing bowl, mash up two ripe bananas.
  3. Add in the pumpkin puree, egg, and oil.
  4. Once all mixed together, add in both sugars, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt. mix until combined.
  5. Add in the flour to the batter and fold it in until combined.
  6. Fold in chocolate chips or nuts.
  7. Place batter into a lined loaf baking pan and bake in the oven for 30 mins or until done.
  8. Once loaf is fully baked, let it completely cool.
  9. While the bread is cooling, combine the powdered sugar, maple syrup, milk, and salt until it is an icing consistency. Set aside until loaf is completely cooled.
  10. After loaf is cooled, spread the maple glaze evenly on top of the loaf, and it is ready to be served. Enjoy!

Notes

  1. The riper the banana's the sweeter the bread. When a banana is black, it is ready to go!
  2. Do not over bake the loaf. You want it to be nice and moist and over baking could affect that.
