
Gooey Ube Brownies are rich, sweet and perfect use of the traditional Filipino ube flavor. These brownies are definitely going to become a new dessert staple once you make them. They are addicting! The vibrant purple color also adds some fun. These ube brownies are super moist, gooey and sure to cure your sweet tooth cravings.
I made these for my husband recently and the first thing he said after he tried them was “so when are you going to make these again?” I promise you loves these and they are a great crowd pleaser. What are Ube Brownies
I know I call these brownies, but maybe they should be called blondies because I don’t make them with cocoa. Instead we use white chocolate for the chocolate sweetness. This recipe also uses ube exstract and ube halaya to really nail the ube flavor. The mix of the white chocolate with the nutty, vanilla ube flavor make these the perfect twist for a Filipino brownie.
How to make the Ube Brownies
These ube brownies don’t require too many ingredients. You just need the basic brownie ingredients: flour sugar, eggs, butter, salt. Then just some white chocolate, ube extract, and ube halaya. That’s it! They are pretty simple and easy to make that anyone can make them.

Gooey Ube Brownies

- 1 9×9 Brownie baking pan
- Parchment Paper
- Oven
- Mixing Bowl and Whisk
Ingredients
Ube Brownies
- 4 oz Baking White Chocolate Bar
- ½ cup Butter
- 1 cup Granulated sugar
- ½ cup Brown sugar
- 1 tsp Salt
- 1½ cup All purpose flour
- 1 egg
- ½ cup Ube Halaya
- 2 tsp Ube extract
Instructions
- Preheat oven to 350℉
- Grease your brownie pan and line it parchment paper. Grease the paper as well.
- Boil some water on in a sauce pan. Place the finely chopped white chocolate bar into a mixing bowl and melt the chocolate over the boiling water until all the chocolate is melted.
- Cut the butter into pieces and place it in the bowl with the chocolate. Continue melting until butter and chocolate are completely combined. Let cool for about 2 minutes.
- In the same bowl with the chocolate and butter mixture, whisk in the egg, sugar, brown sugar, ube extract, and ube halaya until completely combined.
- Sift in your flour gradually into the batter. Be sure to not over mix the batter.
- Transfer your batter to the lined brownie pan.
- Place in the oven for 30-40 minutes or until down.
- Let them cool after baking and enjoy!
Notes
- Try not to over mix the batter. Over mixing can cause the flour to dry and the brownies to crumble.
- Under-done is better than over-done. You want the fudgy, gooey brownies. If they are over done, you aren’t going to get the right texture.
- Use the ube halaya and the ube extract. With both these ingredients, you are going to the most flavorful ube taste.
- The ube brownies are also good chilled. Eat them after thawing for a bit from the freezer to get a delicious chilled chewy brownie.
