Fluffy Pandasal Rolls

Pandesal is a soft and fluffy Filipino bread roll with a lightly sweet flavor, perfect for breakfast or a snack.

Ingredients
  

Yeast Mixture
  • tsp dry active yeast or 1 packet
  • 1 tsp sugar
  • ½ cup lukewarm water (110℉)
Pandasal Dough
  • Yeast Mixture
  • 2 cups All purpose flour
  • 2 cups Bread flour
  • cup Sugar
  • ¾ cup Milk
  • 3 Egg yolks
  • ½ cup Softened butter
  • 1 ½ tsp Salt
  • ¼ cup Plain fine bread crumbs for topping

Method
 

Yeast Mixture
  1. Combine the yeast, 1 tsp sugar, and lukewarm water (about 110°F). Let sit for 5–10 minutes, or until foamy.
Pandasal Dough
  1. Using a stand mixer, mix together both flours, sugar, and salt.
  2. Add in the egg yolks, milk, butter, and yeast mixture.
  3. Mix and knead in the standing mixer until dough is fully combined. The dough should pull off the sides of the bowl when it is ready. If the dough is still too wet, add in a little more flour.
  4. Knead the dough for about 5 minutes then form into a ball and let rise in a warm area for 1-1½ hours.
  5. After rising, knead the dough again. Shape into small balls, toss in fine plain bread crumbs, and place on a greased baking pan with about 1 inch of space between rolls. Then let rise for another 45 minutes-1 hour.
  6. Pre heat oven to 350℉ 15 minutes before baking.
  7. Bake for 18-20 or until golden brown.
