Pinakbet

This Pinakbet recipe is an easy, vegetable stew made with bagoong and shrimp. It is perfect for a quick dinner or meal prep.

Ingredients
  

  • 4 cloves garlic
  • 1 small onion
  • 2 roma tomatos
  • 4 oz shrimp
  • 1 medium zucchini
  • 10 pieces of okra
  • 1 small squash (butternut or acorn)
  • 1 cup chopped green beans or long beans
  • 2 heaping tbsps bagoong shrimp paste
  • 1 cup water or broth
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • salt and pepper to taste

Method
 

  1. Chop all veggies to bite size
  2. Heat oil in a large skillet pan or wok. Sautè in the garlic, chopped tomatoes, and chopped onion and bring to a sizzle until it become fragrant
  3. Add in shrimp or protein of choice and cook until about half way done.
  4. Add in all your chopped vegetables that take longest to cook (squash, zucchini, or other choice of vegetables). Pour in your water or broth and cover the pan.
  5. Once those have cooked for a few minutes, add in your okra and green beans and cook until all veggies are fully cooked.
  6. Now add in your heaping scoops of bagoong, soy sauce, fish sauce, and salt and pepper.
  7. Mix and let simmer for 2-5 minutes.
  8. Serve with steamed rice and enjoy!

Notes

1: Try to not over cook the veggies. You don't want them to get mushy. So, keep an eye on them while they steam up.
 
2: Missing a certain veggies? No problem. You can substitute in all different kinds of veggies and still make the dish just as good.
